The name Nakiri means "leaf cutter" (菜切り包丁) in Japanese, and it was designed specifically for cutting vegetables and fruits. Shorter than a chopper and of similar length, the Nakiri is ideal for quickly and safely chopping vegetables. Its wide blade is convenient for transferring chopped vegetables from the cutting board to the pan. Sometimes spelled Nagiri, the Nakiri has a flat-profile blade designed for pushing or sliding cuts, rather than for slicing with a rocking motion.
