Hashi Tsuchime Range: As its name suggests, KOTAI's Hashi Tsuchime range features Japanese knives made of stainless molybdenum steel with a hammered (槌目 “tsuchime”) blade reminiscent of pebbles in waterways, particularly those of the Itadori River in Seki. In addition to its aesthetic appeal, the hammering facilitates quick cuts thanks to the small air pockets that prevent food from sticking to the blade.
