HASHI - the new collection from KOTAI

Awaken your creativity in the kitchen with the new Hashi (橋, bridge) knife collection from KOTAI. Essential, accessible and designed for ease of maintenance, this range embodies simplicity, ideal for passionate cooking enthusiasts.

Made in Seki, the Japanese cutlery capital renowned worldwide for its high-quality blades and the know-how of its blacksmiths for 800 years, each of the knives is a symbol of minimalist culinary craftsmanship, offering a cutting experience that is as refined as it is functional.

On the theme of its motto “A bridge to go beyond”, the Hashi collection is inspired by the different shapes adopted by water and applies this allegory of “water which relates to its environment” on all of its knives to highlight their versatility. It is therefore available in three distinct editions: Classic, Tsuchime and Damascus, each knife of which is carefully designed to offer you a unique experience adapted to your different culinary needs.

Hashi Tsuchime Range

As its name suggests, the Hashi Tsuchime range offers Japanese knives in stainless molybdenum steel whose hammered blade (槌目 “tsuchime”) echoes the pebbles in waterways, notably those of the Itadori River in Seki.

In addition to its aesthetic appeal, hammering facilitates quick cuts thanks to the small air pockets preventing food from sticking to the blade.
