Nakiri Knife 16 cm - Hashi Damascus Collection

The name Nakiri means “leaf cutter” (菜切り包丁) in Japanese, and it was designed specifically for cutting vegetables and fruit.

Shorter than a cleaver and of similar length, the Nakiri is ideal for cutting vegetables quickly and safely. Its wide blade is handy for transferring chopped vegetables from the chopping board to the pan.

Sometimes spelled Nagiri, the Nakiri has a flat-profile blade designed for push or glide cutting, rather than chopping with a rocking motion.

Hashi Damascus Range

The KOTAI Hashi Damascus range offers Japanese knives combining strength, reliability and long-lasting sharpness, featuring a black pakka wood (pakkawood) handle and stainless Damascus steel blades with an exceptional HRC 61 hardness.

These Damascus blades feature patterns reminiscent of moving waves and water trails on the surface of a river. Thanks to its high carbon and cobalt content, MVS10Cob steel ensures long-lasting sharpness, but requires careful use and maintenance.
