Nakiri knife 16 cm - Hashi Damascus Collection

The name Nakiri means "leaf cutter" (菜切り包丁) in Japanese, and it was designed specifically for cutting vegetables and fruits.

Shorter than a chopper and of a similar length, the Nakiri is ideal for cutting vegetables quickly and safely. Its wide blade is practical for scooping cut vegetables from the cutting board to the pan.

Sometimes spelled Nagiri, the Nakiri has a flat profile blade designed for pushing or sliding cutting, rather than slicing with a rocking motion.

HASHI - the new collection from KOTAI

Awaken your creativity in the kitchen with the new Hashi (橋, bridge) knife collection from KOTAI. Essential, accessible and designed for ease of maintenance, this range embodies simplicity, ideal for passionate cooking enthusiasts.

Made in Seki, the Japanese cutlery capital renowned worldwide for its high-quality blades and the know-how of its blacksmiths for 800 years, each of the knives is a symbol of minimalist culinary craftsmanship, offering a cutting experience that is as refined as it is functional.

On the theme of its motto “A bridge to go beyond”, the Hashi collection is inspired by the different shapes adopted by water and applies this allegory of “water which relates to its environment” on all of its knives to highlight their versatility. It is therefore available in three distinct editions: Classic, Tsuchime and Damascus, each knife of which is carefully designed to offer you a unique experience adapted to your different culinary needs.

Hashi Damascus Range

The Hashi Damascus range from KOTAI offers you Japanese knives combining strength, reliability and longevity of the edge, equipped with a black pakkawood handle and stainless damascus steel blades with an exceptional hardness of HRC 61.

These damask blades feature patterns evoking moving waves and trails of water on the surface of a river. Thanks to its high carbon and cobalt content, MVS10Cob steel provides you with a durable sharpness, but requiring careful use and maintenance.
