The name Santoku means "three virtues" (三徳包丁) in Japanese, as its versatile blade is ideal for cutting vegetables and fruits, slicing meat and preparing fish.

The thin blade of the Santoku allows precise and clean cuts, without ever crushing the most delicate foods, thus preserving all their flavor.

The Hashi Damascus range from KOTAI offers you Japanese knives combining strength, reliability and longevity of the edge, equipped with a black pakkawood handle and stainless damascus steel blades with an exceptional hardness of HRC 61.

These damask blades feature patterns evoking moving waves and trails of water on the surface of a river. Thanks to its high carbon and cobalt content, MVS10Cob steel provides you with a durable sharpness, but requiring careful use and maintenance.
