The name Santoku means “three virtues” (三徳包丁) in Japanese, as its versatile blade is ideal for cutting vegetables and fruit, slicing meat and preparing fish.

The Santoku’s thin blade enables precise, clean cuts without ever crushing the most delicate foods, thereby preserving all their flavour.

Hashi Damascus Range

The KOTAI Hashi Damascus range offers Japanese knives combining strength, reliability and long-lasting sharpness, featuring a black pakka wood (pakkawood) handle and stainless Damascus steel blades with exceptional HRC 61 hardness.

These Damascus blades feature patterns reminiscent of moving waves and water trails on the surface of a river. Thanks to its high carbon and cobalt content, MVS10Cob steel ensures long-lasting sharpness, but requires careful use and maintenance.
