Petty Universal Knife 13.5 cm - Hashi Tsuchime Collection

 

The Petty knife (whose name was borrowed from the French "small" by the Japanese) is a universal knife designed for all small cutting tasks, from quickly cutting an apple to slicing garlic cloves.

 

The Japanese equivalent of the universal knife, the Petty is smaller than a Gyuto/slicer but larger than a paring knife. This intermediate size makes it a versatile all-purpose knife, ideal for a variety of cuts for which a larger knife would have been unwieldy. Its tapered tip gives it great precision, while its length is ideal for slicing small fruits and vegetables, making garnishes or slicing herbs.

Japanese molybdenum stainless steel, thanks to its higher than average carbon content, helps the blade maintain its sharpness longer than ordinary knives. The addition of chromium in the steel alloy makes the blade stainless, easy to use and maintain.

 

Beyond the aesthetic appeal, the hammering of the “Tsuchime” (槌目) blade creates small air pockets between the blade and the slices of food.

This ancestral Japanese method prevents food from sticking to the blade for pleasant and quick cutting.

Hashi Tsuchime Range

 

As its name suggests, the Hashi Tsuchime range offers Japanese knives in stainless molybdenum steel whose hammered blade (槌目 “tsuchime”) echoes the pebbles in waterways, notably those of the Itadori River in Seki.

 

In addition to its aesthetic appeal, hammering facilitates quick cuts thanks to the small air pockets preventing food from sticking to the blade.
