The paring knife is the second most used knife, just after the chef's knife. It is extremely useful for precision operations, away from the cutting board. The paring knife can also be used to peel food.

The KOTAI paring knife has an ideal hybrid shape, combining a nearly flat blade edge for maximum precision and a very fine tip for detail.

Japanese molybdenum stainless steel, thanks to its higher than average carbon content, helps the blade maintain its sharpness longer than ordinary knives. The addition of chromium in the steel alloy makes the blade stainless, easy to use and maintain.
