Prestige Kiritsuke Spectre Knife Set: the knife, its care and your safety
This set brings together the Kiritsuke from the Kaitsuko Prestige collection and two accessories for everyday use: a honing steel to maintain the edge and a stainless steel finger guard to guide the blade safely. Choose your Spectre handle from six colours; the blade remains the same.
What’s in the set
- 1 Kiritsuke Spectre knife : 21.5 cm blade in 10CR15CoMoV steel, 58–60 HRC, with 67 layers of Damascus steel in a San Mai construction, sharpened to 15° per side. Stabilised wood and epoxy resin handle in your choice of colour.
- 1 honing steel : 20 cm stainless steel rod, ergonomic handle. A few light strokes are enough to realign the edge between sharpenings.
- 1 finger guard in 304 stainless steel : 6.5 × 4.5 cm, adjustable ring, suitable for right- and left-handed users. It protects your hand and acts as a guide for even julienne strips and brunoise dice.
Choose your Spectre
- Spectre I : bright red resin and wood in shades of brown. The warmest and most vibrant option.
- Spectre II : pale wood near the blade, white resin near the butt of the handle. The brightest option, with the strongest contrast against the Damascus pattern.
- Spectre III : black resin and beige wood. The most understated option.
- Spectre IV : green and beige exotic wood set in resin. The most organic and artistic option.
- Spectre V : deep red resin, almost burgundy, over pale wood. The most richly coloured option.
- Spectre VI : deep blue resin over pale wood. The freshest option, evoking the ocean against the Damascus pattern.
The wood is deeply impregnated to resist moisture, the resin reinforces the handle’s structure, and the grip does not slip, even with damp hands. The grain and shades vary from piece to piece: no two Spectre knives in the same colour are identical.
Why choose a Kiritsuke
Long blade, straight profile and angular ‘K-Tip’ point: the Kiritsuke combines the length of a Yanagiba (for fish) with the straight edge of an Usuba (for vegetables). It fillets fish and slices sashimi in a single movement, finely chops herbs with the heel flat against the board, and glides through boneless meat. Traditionally reserved for the head chef in Japanese kitchens, the Spectre has a symmetrical double bevel and a Western-style handle, making it suitable for right- and left-handed users. At 58–60 HRC, its steel retains its edge much longer than the Chef Tanaka range (53–54 HRC), but it cannot withstand twisting or impacts against bone. The finger guard in the set helps you maintain a steady cutting motion from your first cuts.

Care instructions:
Hand-wash in soapy water and dry immediately with a soft cloth. Never put in the dishwasher. Sharpen as soon as the edge becomes dull (with a honing steel or sharpener), cut on a wooden board and do not use the cutting edge to push food. Wooden handles: dry thoroughly before storing.
